Mistral vs OpenAI: why European teams should choose differently
OpenAI is the default. For European businesses, Mistral AI offers what OpenAI can't: European infrastructure, European law, and models that are good enough for the work that actually matters.
OpenAI built the category. That doesn't mean it's the right choice for every organisation — especially in Europe.
The compliance gap
OpenAI processes data on US infrastructure. Even their Enterprise tier doesn't solve the fundamental issue: the company is subject to US law. Under the CLOUD Act, US authorities can compel disclosure of data held by US companies anywhere in the world.
Microsoft Copilot has the same exposure. In April 2026, Microsoft's Flex Routing change extended this further — Copilot inferencing inside the EU Data Boundary can now be redirected to non-EU regions during peak demand, without per-request consent.
For European businesses with GDPR obligations, that's real risk.
Mistral AI: the European alternative
Mistral AI was founded in Paris in 2023 by former DeepMind and Meta researchers. Their models are:
- Trained and hosted in Europe
- Subject to EU law and GDPR
- Not used to train other customers' models
- Available across the full performance range (fast, balanced, powerful)
The frontier has moved on from GPT-4 — Mistral's current models aren't the absolute strongest reasoning systems available. For most professional work the gap rarely matters. What matters for European teams is where the data lives.
Model tiers
| Use case | Recommended model | Why |
|---|---|---|
| Quick lookups, snappy answers | Ministral | Small and fast; supports vision |
| Everyday questions, drafting | Mistral Small | Fast, cheap, more than capable |
| Analysis, longer documents | Mistral Medium | Balanced; supports vision |
| Step-by-step reasoning | Magistral | Thinks before it answers; supports vision |
| Demanding work across text and images | Mistral Large | The flagship; supports vision |
| Software engineering | Devstral | Specialised for code |
wozu wires up all six — Small, Medium, Large, the compact Ministral, the Magistral reasoning model, and the Devstral code model — always on Mistral's -latest aliases, so your team gets each tier's current version automatically as Mistral ships updates, without a redeploy. Beyond Mistral, a curated set of additional European-hosted models is available through EUrouter.
The wozu.ai approach
wozu.ai pairs Mistral's EU-hosted inference with a single-tenant chat interface we host on a dedicated EU server for you:
- EU-based inference (Mistral, Paris)
- A dedicated, single-tenant server for conversation history, files, generated images
- No data leaving European jurisdiction
- Nothing used to train any model
The result is a workspace that holds up under the same compliance review your other systems do.
